Double dark chocolate rich cookies


When visiting your boyfriend in a small town and then waiting for your flight home while he is at work, what else would you do other than bake him something delicious?

A couple of weeks ago I was in this very situation. I found a super-simple recipe online and modified it ever so slightly to produce these gooey delights. In hindsight, I should have probably used less sugar or added more flour to avoid that wrinkly sort of appearance after they were cooked, but I heard reports that they were absolutely divine, regardless. Thus, I share the recipe with you. Enjoy!


  • 125g butter, softened and chopped
  • 2 tsp vanilla essence
  • 1 cup brown sugar, firmly packed
  • 1 egg
  • 2 tbsp cocoa
  • 3/4 cup plain flour
  • 1/2 cup SR flour
  • 200g dark chocolate, chopped


  1. Preheat oven to 180°C and line cookie trays with baking paper
  2. Cream butter, vanilla and sugar in large bowl
  3. Add egg, mix
  4. Sift flours and cocoa into mixture
  5. Add chopped chocolate to mixture
  6. Mix it all together
  7. Roll into golf ball-sized balls and place on tray
  8. Bake for about 12 minutes
  9. Cool on a wire rack.
